Our garlic scapes are growing by the day! Garlic scapes are the firm, round flower stems that grow from hard-neck garlic, starting to appear 3-4 weeks before bulb harvest. They have a mild garlic flavor and are a favorite for many recipes such as pesto, soup and stir fry. They can be frozen up to 3 months. If you have never cooked with garlic scapes you have no idea what you are missing. They are only available for a short time in late June.
